<br />I recently had the pleasure to sit in at Maharlika's pop up brunch restaurant where they're serving up traditional Filipino breakfast dishes and twists on Brunch cocktails til the end of March. I was in heaven as my table was filled with practically the whole menu of savory deliciousness that would prove nostalgic to any Filipino who has lost contact with their native cuisine. From the Sisig(pig parts served sizzling on a cast iron skillet topped with 2 eggs sunny up to the tradition Tocilog(Cured pork with Garlic fried rice and 2 eggs and everything in between. Mmmmmm.

<br />Although the concept of a Filipino restaurant isn't new to New York, I feel that the Nicole Ponseca, a former Ad agency executive and Enzo Lim a famed NYC bartender and musician are taking a fresh approach in presenting a taste of the food of 7107 islands that make up the Philippine archipelago.

<br />I had a chance to talk with them briefly in between a packed house of guests and heres what they had to say:

<br /><span style="font-weight:bold;">Enzo:</span>It conveys a rich sense of history. In one sense it refers to nobility -- a warrior noble class to be respected and loved. But it also generates a sense of nationalism.

<br /><span style="font-weight:bold;">(B):</span><span style="font-style:italic;">What inspired you to do this?</span>
<br /><span style="font-weight:bold;">Nicole:
<br /></span> I was working in advertising and occasionally would have to wine and dine my clients. Eventually, the conversation came up about filipino food and where we could go to get some. To be honest, i didn't want to take them to turo turo(filipino fast food) or go to Queens....the offerings at the time didn't showcase the food in a way that could compete with other non-filipino restaurants (e.g. service, presentation, ambiance, wine list, cocktail list, etc.). I started telling myself...I can do this..." so i started working two jobs concurrent with my day job so i could learn the business....hosting, serving, bartending, running, bussing, managing....not sleeping.

<br /><span style="font-weight:bold;">(B):</span> <span style="font-style:italic;">What culinary message are you voicing in your concept? </span>
<br /><span style="font-weight:bold;">Enzo:</span> We want to take a modern, studied spin on classics. As with the food, so in cocktails. Basically, it's important to show people that they are already somewhat familiar with this food / drink. Everybody's got that one Filipino friend, right?

<br /><span style="font-weight:bold;">Nicole:</span> in one word: pride. I want to educate on our history and culture through food. Why is Vietnam and Thailand a common travel destination and not the Philippines? I think its due in part to food....so when you are introduced to goi cuon or pad thai, you start getting curious about the country and culture...well, if you cannot afford the pricey ticket to the Philippines, perhaps you can afford a more accessible dinner amongst 5 friends...and then you might be more curious about the country and the culture...and maybe then people might be more interested in visiting the country....

<br /><span style="font-weight:bold;">Nicole:</span> I saw the success of Egg, and its history of popping up at Sparkys years ago. For us, it became a recession-based solution to getting a business off the ground. We are helping our host restaurant pay the bills and they are helping us get the dream materialized. I wish i could say i had some genius master plan about popping up, but it was all about preparation and being in the right place in the right time....i guess kinda like the book Outliers....

<br /><span style="font-weight:bold;">(B): </span><span style="font-style:italic;">Since this has proven a success whats your next steps?</span>
<br /><span style="font-weight:bold;">Nicole:</span> i'm so entirely grateful for the websites, bloggers, facebook, the reservations and walk ins every weekend. on our first week, we looked at each other and only had 4 tables...i was like "uh...dear god...please send people"...then by the third week, we had reservations booked over a week in advance! Next steps: keep improving and exploring opportunities to share the food.

<br />As they search for a more permanent space to hang up their decorative wooden fork and spoon, I look forward to their goal of Maharlika becoming a benchmark in furthering the niche of Filipino food in the culinary world.

In between beach time and cocktails at the Florida Room, I will compete for the US title and a chance to compete in the International finals, which will be held in Spain. Yes. The goal of the competition is to create the next iconic Bacardi cocktail such as the Mojito, Dacquiri and the Rum & Coke. We were also asked to present the inspiration for the cocktail and its marketability. <br /><br />The Grand Prize winner will get an all expenses paid trip to 5 major cities around the world to bartend (and get paid) at the top cocktail bar under their Master Mixologist. This also commemorates Spike Lee's collaboration with Absolut Vodka in creating the Absolut Brooklyn flavor. With such a complex color to work with I had to take my imagination for a dark stroll. This is my cocktail manifesto.<br /><br /><br />Concept for Cocktail Noir<br /><br />It is a personal return to the color Black.<br /><br />I see Sophistication & Fashion. I fantasize about the 80’s underground art scene and the lawless side of New York with its rebellious youth. <br /><br />It was bad to be in Black.<br /><br />When we go further in time,imagine Film Noir where there’s murder, mystery, intrigue, seduction, suspense and strife. Onscreen as the Vampires bite into their victims they open the gates to release this Black elixir of life lost and eternity regained.<br /><br />There is beauty in the darkness of the shadows.<br /><br />This cocktail represents those visions and each flavor represents a<br />condition when fused together creates a cinematic experience for the<br />senses.<br /><br />Black Vodka* (sophistication/mystery in the color)<br />Sweet vermouth (seduction in the wine)<br />Blood orange (suspense in the citrus)<br />Black Pepper Syrup(strife in the spice)<br />Spray of Orange blossom water (is your first hint of intrigue)<br /><br />* the “Blavod Vodka” is the only black vodka on the market. The vodkas unique black color derives from Black Catechu, extracts from the heartwood of Burmese catechu acacia trees. Such additives reportedly don't interfere with the characteristics of the vodka, adding no additional flavor or odor. We reveled in libations and watched the Official Bar in the Astor Center pump out cocktails from some of the most talented cocktail cats in the country.<br /><br />The preview weekend to the Manhattan Cocktail classic, a festival of seminars and tastings with a goal of preserving the history, culture and art of the cocktail gave us just a touch of what the full 5 day event will be like in May. Attendees got a chance to see, hear and taste with the thought leaders and tastemakers of the cocktail and spirit industry as they talked about some of their favorite points of the culture through seminars. I dipped into the "Cocktails for Your Home Cocktail Party" seminar with Sasha Petraske and picked up a few great tips for the next time I entertain at home. I imagine the avid consumer found this seminar really exciting as he went through lots of great little tips on things such as the quality of ice as well as specifics on counts per person when hosting a cocktail party and how to properly use your bar tools. Out in the main bar area, I got a chance to chat with folks like David Wondrich, Dale DeGroff and even cracked a joke with Gary Regan at his book release party that was held at the new Crosby hotel. <br /><br />The kicker of the weekend was the gala that was held in the gorgeous New York Public library's Grand Astor Hall. 12 bars represented by different brands and again bartenders from the most established cocktail joints were in full sling for our sipping pleasure. My lovely date and I sipped on whiskey cocktails all night and danced to the big band jazz sounds of Vince Giordano and the Nighthawks.<br /><br />It was a fancy affair for the cocktail scene and I was happy to be a part of it. We had the pleasure this time to experience Rouge Tomate, a beautifully airy and fairly new restaurant thats received lots of buzz for addressing social and environmental issues and seeking out farmers who provide local and seasonal produce. They've developed innovative cooking techniques that ignite the natural flavors while heightening the nutritional value of each dish. a boccie court; some lounge chairs, grills and cabanas.<br /><br />*The idea, said David Belt, a real estate developer and the president of Macro-Sea, the company behind the pools, was not to create an exclusive party destination but to experiment with underused space and materials, repurposing them with urban renewal in mind. <br /><br />The party was organized by Jonathan Schnapp, Tahir Hemphill, Chanel(not the brand), and Tristan of Tough Dumpling. Jonathan Schnapp who is a friend of David Belt was given an open invitation to throw a party in the space. He brought in bands, Djs, a 6' whale pinata,3 pork roasts for the grill and about 60 guests filled with good vibes. <br /><br />The bands that played were The Faculty who dropped a a cool live Hip Hop session and Tamar Kali who put it down harder than most could pick up with her afropunk sound. The djs were Tough Dumpling, Radar, Workhorse, Jake, Virgil and Richard who all kept the ebb and flow of the dance floor on point.<br /><br />As for them doing it again, they'd love to, but the pools are being deconstructed this Tuesday, so we've probably seen the last of the dumpster pools in this current incarnation.<br /><br />I guess I can say I got a chance to swim in a dumpster as many of us first timers had the odd experience of sharing together.<br /><br />Keep your ears and eyes open.
